I have been a cooking machine lately! Especially now that it’s getting cooler outside and turning on my oven warms up the house and makes it comfy.
Now that my daughter is crawling and getting into EVERYTHING, I’m exhausted at the end of the day from chasing her around. Because of that, I’ve been turning to some old, faithful recipes for dinner that I practically have memorized, can make quickly and know will be delicious.
Some of my current favorites in heavy rotation are:
America’s Test Kitchen Skillet Lasagna – This is delicious and can be made in about 30 minutes. I’ve used the “meatloaf mix” and all ground beef before and they are both yum!
Chicken and Vegetable Pot Pie – You may remember that I made this as a freezer meal I prepped when I was pregnant and getting ready for my little one to arrive. It’s a favorite recipe of mine and it’s great to make a bunch to stock your freezer or to deliver to new parents. I did just that a few weeks back and it was well-received.
Pasta with Chorizo and Chickpeas – This is great warm and fresh or cold as leftovers. I don’t use chorizo, but instead use hot Italian sausage for great flavor.
Cock-a-Leekie Pie – Silly name, but this dish is amazing! It’s one of our new favorites. An added plus is that I can make the filling during nap time (I actually made it a day ahead of time once) and just throw it all together and pop it in the oven once Cecilia goes to bed.
Enchilada Casserole and Spanish Rice – The enchilada recipe is actually a slow cooker recipe. I wasn’t a fan of it in the slow cooker, so I cook it in the oven as a casserole versus individual rolled enchiladas. I grab my long pyrex dish, pop a little bit on enchilada sauce at the bottom then a layer of tortillas. On top of that, I spread out half of the filling, another layer of tortillas and small amount of enchilada sauce across those tortillas. Then another layer of chicken, tortillas and the mixed remainder of enchilada sauce and sour cream. Then I top that off with some extra shredded cheddar. That goes in a 375F oven for about 30 minutes until the cheese is nice and melted and the filling is bubbling. This is great to make ahead and keep in the fridge until you’re ready to pop it in the oven (I prep it during nap time). I have also delivered it twice in the last two weeks to friends with new babies. It’s a winner!
Roasted Lemon Broccoli – I use this as a side to some nice pork chops or a steak. It’s a big hit! The broccoli gets some great flavor and I honestly could eat the whole batch in one sitting.
In addition to the meals above, Wednesdays have become slow cooker days in my house. It’s the day my husband comes home late and for whatever reason, it’s always hard for me to cook muster up the energy to get in the kitchen and cook in the middle of the week. Using my slow cooker helps me get over that hump and provides us with enough leftovers to get us to the weekend. Win, win!
Here are some recent slow cooker favorites –
Slow Cooker Chili Chicken Tacos – This is the epitome of an easy slow cooker meal. Literally you open jars, pour in spices, pop in the chicken and you’re good to go. It’s tasty to boot and if you don’t feel like having it as tacos, we’ve eaten this chicken as a nacho topping with tortilla chips, cheese and extra salsa!
Slow Cooker White Chicken Chili – I wouldn’t necessary call this one chili because to me it tasted more like a chicken tortilla soup once I added on my chili-type toppings. Either way it’s super easy and was a big hit with my husband.
I’m going to doctor up another slow cooker chili recipe I found this week, so I’ll report back on that soon!
As for sweets, we have been eating this big batch pumpkin chocolate chip bread from one of my favorite food bloggers. It’s one of my new favorite recipes and since it’s big batch it made SIX loaves of bread. I made it a couple of weeks ago and I’ve been gifting loaves left and right (since it’s so good!) and I only have one loaf left in the freezer. It’s definitely on the docket to make again soon, though!
