I feel like I’ve been in a dinner rut lately. Don’t get me wrong, I love everything I’ve been making, but it’s been a while since I’ve tried something new.
I’ve been on the hunt for a new cookbook and recently bought Cravings by Chrissy Teigen. I know what you may be thinking (what does a swimsuit model know about cooking?), but everything in the book looks amazing and I’m so excited to start making my way through it. Stay tuned for more! Here’s what’s been in our dinner rotation lately:
Homemade Pizzas – I’ve always been a fan of Trader Joe’s pizza dough and always have some in the freezer should I suddenly be in the mood to make pizza. I make pizza a few times a month and it’s always a hit in our house, plus Cecilia loves to help roll out the dough and add the toppings. Recently I’ve been making this bacon, brussels sprouts and ricotta pizza and this summer I made this veggie pizza a few times. I also like to snag a tub of pizza sauce from TJs, cook up some hot Italian sausage and pop all that on a pizza with some pepperoni and whatever cheese I have on hand. Love homemade pizza!
Slow Cooker Baby Back Ribs and Cornbread Muffins – This meal has become a staple in my house because of how stinking easy the ribs are to make. Cecilia loves the ribs and the meat literally falls off the bone because I always cook them low and slow for eight hours. The cornbread is also a huge hit with the little one. She loves to make them and would probably eat every single on of them if I let her. Such a great and easy meal!
Cock-a-leekie Pie – Yes, it’s a silly name, but this dish does not disappoint. The filling is so tasty and I love that it uses two sheets of pie dough/puff pastry. I also love that the filling can be made ahead of time because I can whip it up during nap time and pop it in my dish and cook it later in the day.
Chicken and Dumplings – Can you ever go wrong with chicken and dumplings? I think not. This is comfort food at it’s finest and making it makes me so excited for cold weather. A plus is that it all tastes even better the next day.
In addition to these dinner staples, I’ve been making this brown butter cinnamon sugar popcorn to snack on and recently made this big batch pumpkin bread. I made this recipe last year and loved it and made some again last night. The recipe uses and entire large can of pumpkin puree and I can get six loaves out of it, so I always leave one out for us to eat and then pop the rest in the freezer to thaw at a later time or give to friends. So good!
