And we’re back for another roundup of what we’ve been eating lately.
I get asked what I’m up to in the kitchen all the time, so I love sharing our favorite recipes with you! Here’s what we’ve been cooking up…
America’s Test Kitchen Simple Fried Rice – This recipe is always made by my husband and we devour it! Seriously, I’ve found myself just eating it out of the pan once I’ve finished my bowl. It’s best to use leftover rice for this dish and we use whatever veggies we have left in the fridge or freezer, so it’s a great end of the week meal when you have random odds and ends in your fridge.
Orange Cranberry Buttermilk Scones – Yes, these are my own recipe, but I love them! I made a huge batch before we hit the road for Christmas vacation and they were a great snack to have on the road and at our Airbnb house. They have great texture and the orange and vanilla bean paste make them pop with flavor.
Chickpea Pasta Soup – OMG. I LOVE LOVE LOVE this soup! It’s super tasty (much of the salt comes from parmesan) and does not take a long time to prepare. Both of those things are a huge plus in my book since I cook at the end of a long day of chasing a baby around. Speaking of baby – she loves and gobbles it up, too!
Mini Chicken Meatball Soup – Just like the chickpea pasta soup, this recipe comes from Jessica at How Sweet It Is. Again, this soup is tasty, fairly quick and is baby-approved. Travis was a little hesitant about this soup because he said he’d never had meatballs in soup before, but he ended up really liking this dish. Also, just like the chickpea soup, this one has pasta in it, too. Apparently if you put pasta in a soup, our family will go crazy for it.
Slow Cooker Turkey Chili – Last time I wrote a recipe roundup post, I mentioned that I’d been using my slow cooker for dinner at least once a week. I haven’t been cooking as much in it lately, but when I do, I’m cooking this chili. Yes, it does take some prep time before it goes in the cooker, which I normally am not a fan of, but the end result is so worth it.
Cinnamon Chocolate Chip Cookies – Y’all. Every time I make these cookies, I fall in love with them all over again. I normally make these at the spur of the moment when I’m really craving some cookies, so I generally don’t make them with peanuts (since I don’t always have them on hand) and they’re still AHHHHHH-MAZING. I pat myself on the back for that one.
S’mores Crockpot Brownies – So, these are freaking awesome. I made them for a friend’s crockpot Christmas party and they were ridiculous. Do yourself and your friends a favor and make them a batch. They’ll honestly love you forever.
