Before this current heat wave hit, I was cooking up a storm! Here are some recent favorite meals that I highly recommend you make at home!
Summer Turkey Meatballs – I made this for the first time the week we got home from Italy have made it a handful of times since because it’s so freaking good! I’m sure it will be tasty and hit the spot all year round, but the lighter sauce and ease of making it scream summer. This is a must try.
Rigatoni with Sausage, Beans and Greens – Another easy dish with a big payoff. This tastes great the next day cold or hot for leftovers, so those are all big pluses in my book!
Roasted Tomato Soup – It’s been HOT here the last couple of months, so pretty much anytime the temperature has dropped below 75 degrees, I deem it soup weather. This one is always the first soup I go to because, paired with a grilled cheese, it’s comfort food at it’s finest without being super heavy. LOVE.
Honey Dijon Chicken Skillet – Y’all, this is sooooo good! I love that I always have all the ingredients I need on-hand, so if I need a dinner that’s easy to come together, but have nothing planned, I can always go to this. It goes great with brown rice or roasted vegetables.
Skinny Refried Bean and Chicken Enchiladas – Again, an easy meal to put together with a delicious ending. Are you sensing a theme with our dinners lately? Easy, but delicious is the name of the game when it’s hot outside and I don’t have enough energy to cook an elaborate meal.
30 Minute Turkey Chili – I have been making this for more than a decade. It’s my go-to chili recipe and always hits the spot. It makes my house smell AMAZING and goes great with some sour cream and shredded cheddar cheese.
One-Pot Apple Cider Braised Chicken with Brussels Sprouts and Bacon – I’ve only made this once, but it’s on my list to make again. I’m a BIG fan of one-pot meals (who isn’t????) and this one was GOOD. I mean how could you go wrong putting apple cider, brussels sprouts and bacon together?!?! The answer is: you can’t. You definitely need to make this.
Healthy Pumpkin Banana Muffins – Cecilia and I made these one day when we had some over-ripe bananas and weren’t in the banana bread mood. It’s pumpkin season, so I Googled “pumpkin banana recipe” and found this. I love baking recipes from Ambitious Kitchen, so I knew these wouldn’t disappoint. I had everything on hand except for macadamia nuts, so I just added some chocolate chips to the batter and they were perfect. They also freeze well, so you can make some and save for later!
