I have so many new recipes in my rotation that I’m excited to share with you!
We’ve been cooking and baking like mad people over here, so these recipes range from snacks, dinner and dessert. Okay, here we go!
For Cecilia’s party I made three different quick breads. This was was the best party decision I made (next to getting a piñata). Each bread was so good and two of the three recipes I used made two loaves, so I used one for her big party and one for her Stroller Strides birthday celebration the next day. I made them early in the month and froze them until the night before, since I knew I’d be up to my ears in baking and decorating cupcakes. These are the breads I made and I would make them all again and again.
Orange Glazed Cranberry Bread from Sally’s Baking Addiction (I didn’t end up adding the glaze and it was still yummy).
For dinner, these recipes have been heavy in our current rotation…
Broccoli Cheddar Soup – I’ve made this at least twice a month since the Fall. It’s so good and hearty and Cecilia will gobble it up!
Balsamic Chicken with Roasted Vegetables – I’m a big fan of this dish because it is so crazy easy to make and has great flavor. I love all the roasted vegetables and have experimented with the types I include. The only thing I do differently from the recipe is that I season the veggies. It’s a lot of chicken and vegetables for only one teaspoon of salt, so I don’t go crazy with the salt, but I definitely add more than what’s called for.
Crusty Baked Shells & Cauliflower – This is an Ina Garten recipe I found in Food & Wine. I loved most baked pasta dishes because they’re always so simple and filled with flavor. This one is no different. We’re on a cauliflower kick in our house, so that was a plus and I really loved the lemon flavor in this dish. You can’t go wrong with Ina!
Chicken Enchiladas with Ridiculously Easy Mole Sauce – I’ve been following Bev’s blog for a while now, but this was the first recipe of hers I’ve made and it made me really excited to try more! As advertised, the mole sauce was ridulously easy and really rich. The whole dish was really simple to make and it was probably one of my most favorite new recipes.
Fish Tacos – These fish tacos are so good and a cinch to make! You can even make the pico de gallo and creama ahead of time if you know you’re going to be in a pinch come dinner time.
Pesto Chicken Pizza with Roasted Broccoli + Red Peppers – This is ALWAYS in our rotation.
Cecilia’s Favorite Berry Smoothie – We have been making this smoothie non-stop lately! It’s just so good!
