Since the holidays are behind us, we’ve been focusing on cooking most everything we eat at home and eating on the healthier side.
Yes, I’ve totally been eating all week from a jar of queso cheese I bought from Trader Joe’s, but it’s all about balance, right? Here are our favorite healthier eats we’ve been enjoying…
Lightened Up Salsa Verde Chicken Enchiladas – I made these for the first time last week and they were a BIG hit and super easy. I use my favorite green salsa from Trader Joe’s and I love that the brown rice is already in the enchiladas.
Curried Lentil, Tomato and Coconut Soup – One of my favorite new soups to make! It’s easy and comforting. If I see it’s going to rain or be cold at night when I’m menu planning, I add this one to the list.
Sheet Pan Parmesan “Fried” Chicken with Broccoli and Sweet Potato Wedges – Three cheers for fried chicken without the “fried!” Fried chicken is something Travis and I both crave when we want to eat something fatty, so I’m glad I found a tasty roasted version. Roasted sweet potatoes and broccoli are two of my favorites, so this meal combines lots of things I love into one!
One Pan Healthy Sausage and Veggies – I’m a BIG fan of one pan meals. When I cook, Travis does the dishes, so I guess he’s probably a fan of them, too 🙂 When I first made this one I wasn’t sure what to expect in the flavor department, but it is packed full of it and I love how many veggies it has. This is a new go-to.
Healthy Turkey Lasagna – Y’all. This. is. so. good. It takes longer than most meals I make during the week, but it’s well worth it. It also makes a ton, so I assemble and cook it all in one big dish then once it’s cooked, I cut it in half and freeze the half we don’t eat. It’s so nice to know that on a day when I don’t feel like cooking, I have a healthy meal ready to go in the freezer.
One Pan Thai Coconut Yellow Curry Chicken and Rice – There is so much flavor in this dish – and, hello – it’s all made in one pan! I’ve had a few friends make this, too, and they have all loved it.
Roasted Strawberry Apple + Cinnamon Overnight Oats – I showed up late to the overnight oats show, but I’m a big fan. Weekday breakfasts can be rough for me to figure out what I want, but this always hits the spot.
Super Easy Coconut Maple Granola – I LOVE this granola! It makes a fairly big batch, so we have it to put in our breakfast yogurt or just to snack on instead of reaching for the chips (and queso).
Cecilia’s Favorite Berry Smoothie – Still my favorite smoothie of all-time to make. Cecilia has been a VERY picky eater as of late, but she’ll always say yes to a smoothie. I pack this one full of tons of goodness, so I know she’s getting some good nutrition and greens.
Healthy Carrot Zucchini Muffins – THE BEST to have around for breakfast or a snack. Again, Cecilia will devour these, but I’m okay with it because they’re loaded with veggies, fruits and oats.
