Summer is here!
Not only does it bring with it fun in the sun, great reading and vacations, but it also brings some tasty treats!
In terms of summer treats, I am an ice cream in a waffle cone or summer fruit cobbler kind of girl – especially if that cobbler is topped with either vanilla bean whipped or ice cream.
And I want to pat myself on the back for a second because I’ve created and am sharing a summer treat for you that combines waffle cones, vanilla bean whipped cream and my favorite summer fruit! Ack! Oh, and just to kick the whole thing up a notch, I added a little bit of chocolate in there, too.
Seriously, this is my new favorite treat for those warm summer days and nights. Who said waffle cones just have to be for ice cream?!?!
These treats are great for any summer gathering you’re hosting or attending. You can assemble them right before serving or you can setup a make-your-own bar for an extra layer of fun for everyone.
The first thing I did when making these fruit cones was melt some white and dark chocolate (see full directions below) and dip the top of some Keebler Waffle Cones in the melted chocolate. You can leave the tops plain with just chocolate, but I thought dipping them in some red and blue Rice Krispies would be even better more festive – especially for your Fourth of July celebrations.
Now, before we go any further, let’s chat vanilla bean whipped cream.
Seriously, it is so easy to make, but OMG does it impress people when you tell them that you made this sweet concoction for them. If you’ve never made it before, I promise once you do, you won’t go back to buying it and you will make it to go on EVERYTHING.
Just look at those vanilla bean flecks! Eek! That’s the bonus of using vanilla bean seeds or vanilla bean paste.
Once you’ve got your whipped cream made, it’s time to layer it in with some fruit. I mixed the fruit all together, but you can easily make a layer for each type of fruit you have. It’s totally up to you! For this dessert, I used strawberries, blueberries, blackberries and peaches, but any summer fruits will do.
After I alternated layers of whipped cream and fruit, I topped it off with extra vanilla cream and Rice Krispies, because why not?
I got everything I needed to make these summer treats at my favorite store – Target. At my local store, I found the Keebler Waffle Cones on a couple of different end caps flanking the freezer aisle where you’d find the ice cream. The Rice Krispies can be found in the cereal aisle and since you’re there to grab those items, you can also grab the heavy whipping cream, vanilla and fruit you’ll need, too!

Summer Fruit Ice Cream Cone Parfaits
Ice cream cones aren't just for ice cream! Whip up this easy summer fruit ice cream cone parfait that's sure to impress even the most loyal ice cream lovers.
- 6 Keebler Waffle Cones
- 1/2 cup white chocolate chips
- 1/2 cup bittersweet chocolate chips
- 1 cup Rice Krispies (I used the red and blue Rice Krispies)
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 vanilla bean - seeds only (you can substitute 1 tablespoon vanilla bean paste)
- 1/2 cup diced peaches (from one large peach)
- 1/2 cup whole blueberries
- 1/2 cup whole blackberries
- 1/2 cup diced strawberries
Melt both chocolates separately in a double boiler (or you can also use the microwave by heating for 15 seconds at a time and stirring between each round until the chocolate is melted). Let the chocolate cool slightly.
Dip the top of each Keebler Waffle Cone in the melted chocolate then roll it in the Rice Krispies and set aside. In the photo above, you can see I propped the cones up slightly on a rolled dish towel, so the chocolate didn't touch the counter.
Make the vanilla bean whipped cream by placing the heavy cream in the bowl of your stand mixer (or if using an electric hand mixer, place the cream in a large bowl). Whip on high and when it starts to thicken, add the powdered sugar and vanilla. Whip until you get stiff peaks (see photo in post).
In a small bowl, mix together the peaches and all the berries.
Fill the cones one at a time. Start with a small spoonful of whipped cream at the bottom of the cones, then layer a spoonful of fruit on top. Continue layering whipped cream and fruit until you reach the top of the cone.
Top the cone off with a dollop of whipped cream and a sprinkle of Rice Krispies. You can also drizzle some of your melted chocolate on top, too!
The whipped cream can be made up to two days ahead of time and stored in an airtight container the the fridge. Additionally, the cones can be dipped in chocolate and coated in Rice Krispies ahead of time, but it is best to assemble the rest of the cones right before serving so the cones stay crunchy.
